PINEAPPLE
WALDORF

½ cup
coarsely chopped walnuts

cups pineapple chunks, drained, reserving the pineapple
juice

2 red
apples, unpeeled and cubed

1 to 1 ½
cups miniature marshmallows

tablespoon lemon juice

teaspoon sugar

teaspoon salt

½ cup
whipping cream

(3-ounce) package cream cheese

½ cup
diced celery
Toast walnuts
in over for 10 minutes; set aside. Combine ¼ cup juice from
pineapple and apple in large bowl. Mix to coat. Add remaining
¼ cup juice, marshmallows, lemon juice, sugar and salt. Beat
cream cheese at medium speed with electric mixer until smooth.
Add whipping cream, beating until mixture is stiff. Fold in
marshmallow mixture. Drain juice off apple; add walnuts,
pineapple chunks and celery. Fold in cream cheese mixture. Serves
