Cranberry Bran Muffins  

Preparation time: 15 minutes
Cooking time:
20 minutes
 

  • 1-1/4 cups all-purpose flour

  • 1-tablespoon baking powder

  • ¼ teaspoon salt

  • 1-3/4 cups bran flakes cereal

  • ¾ cups dried, sweetened cranberries

  • 1-cup skim milk

  • 1 egg, slightly beaten

  • ½ cup applesauce

  • 1/3 cup firmly packed light-brown sugar

  • 2 tablespoons butter or margarine, melted 

Preheat oven to 400 degrees. Lightly grease a 12-cup muffin pan. In a large bowl, combine flour, baking powder and salt. In a medium, combine cereal, cranberries and milk; let stand 3 minutes. Stir in egg, applesauce, sugar and margarine. Add to flour mixture; stir just until moistened. Batter should be lumpy. Spoon batter into prepared muffins tin, filling each cup about two-thirds full. Bake 20 minutes or until golden brown. Do not over bake. Serve warm. 

Note: For raisin bran muffins, increase amount of cereal (raisin bran) to 2 cups and omit cranberries,

Yield: 12 muffins
